Kevin Poon has a diverse work experience. Kevin started their career as a waiter at Buffalo Wagon Pan Asian Cuisine & Sushi in 2017. Later, in 2020, they worked as a Seasonal Sales Associate at J.Crew, where they interacted with customers, managed the cash register, and maintained the store's cleanliness. In 2021, they worked as an Engineering Technician at Advance Testing Company, Inc., where they monitored asphalt field density, communicated findings to the construction crew, and recorded information using the company's web application. Currently, they are working as a Manufacturing Process Engineer at Plug Power, where they develop work instructions, coordinates with a team of engineers to update procedures, and collaborates with various employees to improve the build process.

Kevin Poon attended Binghamton University from 2015 to 2020, where they earned a Bachelor of Science (BS) degree in Mechanical Engineering. Prior to that, they attended Colonie Central High School from 2011 to 2015, where they received an Advanced Regents Diploma, was on the High Honor Roll, and ranked 11th out of 392 students.

In addition to their educational background, Kevin Poon has obtained several certifications. In April 2021, they received the NETTCP HMA Paving Inspector certification from the NORTHEAST TRANSPORTATION TRAINING AND CERTIFICATION PROGRAM INC. Kevin also obtained the NYS HMA Density Testing Inspector certification from the Associated General Contractors of America in the same month and year. In March 2021, they completed the OSHA 10-Hour Construction Safety and Health training from the Occupational Safety Health Administration (OSHA).
