Mathieu B. is a postgraduate researcher at the National Center for Franco-Irish Studies since May 2022, actively involved in the Association of Franco-Irish Studies. Mathieu has extensive experience as a food educator in various settings, including Oberstown Children Detention Campus and South Area Youth Service, where culinary lessons were delivered to youth. Previous roles include chef tutor at Lismullin Cookery School and food educator at St Patrick's Classical School. Mathieu served as Catering Manager for Ballsbridge Catering Ltd at Avolon and held head chef positions at 'Maia' Cafe/Deli and Mayfield Deli & Eatery. Notable experience also includes working as Executive Sous Chef at Vodafone Ireland Ltd and Kitchen Manager at 'TriBeCa' Restaurant. Education includes a Master's degree in Gastronomy and Food Studies and ongoing PhD studies at Technological University Dublin, with additional qualifications in culinary arts and restaurant management from institutions in France.
