Rachael Matthews (ANutr) has a wealth of experience in product development and marketing. Rachael began their career in 2008 as a Healthcare Advisor/Pharmacy Assistant at Boots, where they obtained a score of over 70% in recognised healthcare examinations and was able to dispense over-the-counter medicines to the public. In 2009, they moved to Estee Lauder Companies Europe as a Beauty Advisor/Make-up Artist, where they developed their event management skills. From 2013-2015, they worked at O'Neill and Brennan as a Recruitment Consultant, building strong relationships with clients and candidates. During this time, they also held a secondment at McDonald's Corporation as a Food Development Officer, and at Kerry as a RD&A/Foodservice Graduate. In 2017, they joined Sainsbury's as a Product Development Manager, where they worked to implement the FSA salt targets across the business. Rachael then moved to Leon Restaurants in 2019 as an Innovation and Product Marketing Manager and Product Development Manager. Most recently, in 2023, they became the Head of Product at TRIP.
Rachael Matthews (ANutr) has a comprehensive educational background. Rachael completed a Master of Science (MSc) in Clinical Nutrition/Nutritionist at King's College London from 2011 to 2012. Prior to that, they obtained a Bachelor of Science (BSc) in Biological and Biomedical Sciences at Maynooth University from 2007 to 2011. Rachael then went on to receive a Postgraduate Diploma (PGDip) in Business Management Practice at the Irish Management Institute from 2013 to 2015.
