Evelyn Rios, MS, RD, LDN, serves as a Clinical Instructor in maternal and family health at the UIC College of Applied Health Sciences and as a Maternal Health Registered Dietitian for UI Health Miles Square Clinics. In addition, Evelyn works as a Nutrition Educator at UI Health, focusing on adult nutrition education for diabetes and hypertension. With experience as a Registered Dietitian and Medical Interpreter at CommunityHealth since June 2020, Evelyn has also contributed as a Graduate Research Assistant and volunteer at the University of Illinois College of Medicine from March 2020 to December 2023, and volunteered in the Intensive Care Unit at Ann & Robert H. Lurie Children's Hospital of Chicago from July 2018 to December 2023. Evelyn's internship experiences include roles at ADVOCATE SYKES HEALTH CENTER, Northwestern Medicine, the Academy of Nutrition and Dietetics, Advocate Illinois Masonic Medical Center, and iCook After School. Educational credentials include a Master's degree and a Bachelor of Science in Dietetics and Clinical Nutrition Services from the University of Illinois Chicago, where Evelyn also completed an Honors program.
