Dr. Avinash Singh Patel, a seasoned professional with expertise in proteins, hydrocolloids, and nutraceuticals, recently joined Climax Foods, a prominent AI startup in Berkeley, as a Protein/Texture Scientist. In his prior role as a Postdoctoral Research Scholar at North Carolina State University in 2021, he specialized in modifying proteins to enhance their functionality and improve the gastrointestinal delivery of nutraceuticals. During his tenure as a Research Assistant at the University of Maine in 2017, Dr. Patel made significant contributions to Maine's seaweed farming industry by creating value additions, devising business plans, and formulating market strategies for natural-colored bioactive proteins from seaweeds. Additionally, as a Senior Research Fellow at the Indian Agricultural Research Institute in 2014, he played a key role in designing experiments and conducting bio-chemical and statistical analyses.
