Amy van Saun is a Senior Attorney at the Center for Food Safety, where experience includes environmental public interest litigation related to food production since March 2019. Prior to this role, Amy served as a Staff Attorney at the same organization from March 2015 to June 2018. Other positions include Contract Attorney at Stoll Berne focused on document review, Associate Attorney at Mendes & Mount handling litigation in insurance and environmental law, and Volunteer Attorney at Earthjustice contributing to research projects supporting public interest environmental litigation. Amy's early legal experience includes roles at Earthrise Law Center as a Clinic Student and Law Clerk, as well as a Law Clerk at the Center for Food Safety involved in legal research and drafting. Educational background includes a Juris Doctor degree in Natural Resources and Environmental Law from Lewis & Clark Law School and a BA in Sociology and Art from SUNY Geneseo.
