Derrick Lau is a culinary professional with extensive experience in various leadership roles within the food service industry. Currently serving as General Manager at Bon Appétit Management Company since January 2021, Derrick has also held multiple positions including Executive Chef and interim Culinary Director. Previous experience includes establishing menu standards as the Executive Chef at Sunset Slurps and serving in various capacities at Bon Appétit Management Company from 2017 to 2020. Derrick's early career includes roles such as Junior Sous Chef at CÉ LA VI and Senior Chef de Partie at JW Marriott Hotel Hong Kong. Derrick holds an Associate's degree in Culinary Arts from the California Culinary Academy and a Bachelor's degree in Biology from San Francisco State University.
