Shannon Griffin is an experienced culinary professional with a diverse background in fine dining and seafood cuisine. Currently serving as Executive Sous Chef at Bel Air Bay Club since September 2010, Shannon specializes in fresh seafood, housemade and extruded pastas, Neapolitan pizzas, and seasonal vegetables. Previous roles include temporary positions at Michelin star restaurants Cracco Group and Ristorante Sadler, featuring modernist Italian cuisine. Shannon's prior experience encompasses Chef De Cuisine roles at Shutters on the Beach, focusing on fine dining Italian cuisine, and at The Peninsula Beverly Hills, centered on French Californian cuisine, emphasizing seasonality and product quality. Education includes attendance at Hemet High School.
