Emily Eby has held a variety of roles since 2012. Emily began their career as a Hostess at OneSpeed Pizza in 2012 and then at Bistro 33 in 2015. In 2016, they took on several roles including Waste Reduction Intern at UC Davis Sustainability & Nutrition Office, Instructor at Sprout Up, and Member Services Attendant at UC Davis Activities and Recreation Center. Emily also served as Vice President of Organization for Kappa Kappa Gamma Sorority and Bartender at Three Mile Brewing Co. in 2017. In the same year, they worked as a Wine Program Student Assistant at UC Davis Cal Aggie Alumni Association. Since 2019, Emily has been employed at Adpearance, where they have held the roles of Product Manager, Project Manager, Project Coordinator, and Digital Marketing Coordinator. In 2016, they also worked as an Academic Peer Advisor at UC Davis College of Agricultural & Environment Sciences Dean's Office, where they achieved a positive working environment, provided front-desk management, and took part in hiring and awards committees.

Emily Eby obtained a Bachelor's Degree in Agricultural Economics from the University of California, Davis between 2014 and 2018.
