Matthew Doyle RDN serves as the Assistant Director for Board Operations and Senior Nutrition of Dining Services at the University of Northern Colorado since August 2012. Prior to this role, Matthew held positions at St. Norbert College in De Pere, WI, from 1996 to 2012, including Associate Director of Dining Services and Union Dining Room Manager. Matthew obtained a BS in Business Administration with a focus on Dietetics from Minnesota State University, Mankato, between 1983 and 1994, and completed an AP4 Internship in Dietetics at the University of Wisconsin-Green Bay from 1995 to 1996.
