Brett has been in various leadership roles in the restaurant industry for the last 25 years including upscale chains like the Chart House and as an owner-operator and Brew Master in privately held restaurants and pubs. He has led the creation of new concepts, new menus and the ground-up construction of several restaurants. Brett joined TooJay’s as a restaurant manager in 2008, was promoted to GM six months later and then to Area Director in 2011 and Director of Operations in 2015. Brett grew up in Florida, attended the University of South Florida in Tampa and holds several Brewing Certifications from the Siebel Institute of Technology in Chicago.
