Darby O'Connor, CPA, currently serves as the VP Corporate Controller at Pollo Tropical since March 2024. Previously, O'Connor held the position of Controller at reCommerce Brands from December 2020 to March 2024 and was the Director of Accounting at Chewy between March 2015 and November 2019, where responsibilities included co-project management of Oracle Cloud ERP implementation and oversight of payroll and accounts payable departments. Prior experience includes roles as Accounting Manager at Xerox (formerly Symcor), Senior Accountant at Symcor, and Accountant at McGladrey, focusing on financial audits and compliance engagements. O'Connor holds a Bachelor of Business Administration in Accounting from the University of Florida and a Master's degree in Accounting from Florida Atlantic University.
