Dylan McDonnell is the Founder and CEO of Foodini, which focuses on connecting individuals with dietary needs to appropriate restaurants and menu items through a user-friendly app. In addition, Dylan serves as a Mentor at Founder Institute and a Limited Partner at Mendoza Ventures, a Boston-based venture capital firm specializing in fintech, artificial intelligence, and cybersecurity. Prior experience includes roles as Senior Associate and Legal Counsel at Mercer, Legal Secondee at Mercer, and several positions at Matheson, where responsibilities included asset management and investment funds. Dylan holds a Master of Laws (LLM) in International and European Business Law from Trinity College Dublin and a Bachelor of Civil Law from University College Cork. Additionally, participation in the Founder Institute's Accelerator Programme further demonstrates entrepreneurial commitment.
