Carlos began their career as a Computer Analyst at Mega Sistemas Corporativos in 2004, where they worked until 2006. Carlos then transitioned into the hospitality industry, starting as a Waiter at The County Hall Restaurant @ Marriott Hotel County Hall in 2006.
Over the years, Carlos has gradually progressed in their career, taking on roles such as Bartender at The Rotunda Lounge @ Marriott Hotel County Hall from 2007 to 2009, and later as a Restaurant Supervisor at The County Hall Restaurant @ Marriott Hotel County Hall from 2009 to 2010.

Carlos's next role was as General Manager at Red Dog Restaurants from 2013 to 2015, where they gained valuable experience in leading a team and overseeing daily operations. Following this, they joined Coin Laundry - Exmouth Market as General Manager from 2015 to 2017, further solidifying their expertise in managing hospitality establishments.
In 2017, Carlos's career took a new direction as they joined Goose Island Beer Company as a General Manager for a short period of time. Later in the same year, they transitioned to Humble Grape, where they held the position of General Manager until 2021, and is currently working as an Operations Manager.

Carlos Santos, DipWSET, began their education in 2018 at the Wine & Spirit Education Trust, where they completed Level 3 coursework. Following this, from 2019 to 2021, they pursued the Level 4 - Diploma in Wines at the same institution. Carlos also obtained a certification as a Certified Beer Server (Level 2) from the Cicerone Certification Program, although specific dates for this program are not provided.
