Paul Peel is an experienced bartender and bar manager with a diverse background in establishing and managing bar operations across various venues. Currently serving as Chef de Bars at ´¡±ô²¹Ã¯²¹ SA since May 2021, Paul has excelled in training, bartending, and cocktail menu design. Previous roles include Bar Manager at Hotel Phenix, where Paul contributed to the launch of a mezcal and tequila-focused cocktail bar, and Bar Manager at Vie Montagne, where Paul was involved in setting up a private members bar with a focus on high-quality cocktails and microbrewery operations. Additional experience spans positions at L'Etoile Rouge, Nomad Sushi Lounge, and Farinet Lounge Bar, as well as foundational roles at The Living Room and The Square on the Lane.
