Pankaj Uniyal is an experienced culinary professional specializing in pastry and bakery. Currently serving as Head Baker at Accor since December 2023, Pankaj has previously held positions including CDP pastry & bakery at CITY SEASONS HOTELS, Demi Chef De Partie at Dusit Thani Abu Dhabi, and pastry & bakery commis chef at Ayla Hotels & Resorts. Pankaj started in the bakery and pastry segment as a bakery & pastry chef at Ritzy Palm Restaurant in Dubai and gained foundational experience as a commis in the field at Royal Orchid Hotels.
